
Ingredients:
- 1 cup rolled oats
- 1/2 cup fresh or frozen blueberries
- 1 cup unsweetened almond milk (or milk of choice)
- 1 tbsp chia seeds or flaxseeds (optional for extra fiber and omega-3s)
- 1/2 tsp cinnamon (optional)
- 1 tbsp honey or maple syrup (optional for sweetness)
- A handful of nuts (almonds, walnuts, or your favorite) for crunch (optional)
Instructions:
Cook the Oats: In a medium pot, bring the almond milk to a gentle simmer over medium heat. Add the rolled oats and cook, stirring occasionally, for about 5-7 minutes until the oats are soft and the mixture thickens. You can adjust the consistency by adding more milk if desired.
Add the Blueberries: While the oats are cooking, add the blueberries to the pot. If using frozen blueberries, stir them in towards the end of the cooking process so they don’t break down too much. For fresh berries, you can add them in earlier.
Add Seeds and Spices: Once the oats are done cooking, stir in the chia or flaxseeds and cinnamon for extra nutrients and flavor.
Sweeten: If you’d like some added sweetness, drizzle in a bit of honey or maple syrup, and stir well.
Serve: Pour the oatmeal into a bowl, and top with your favorite nuts for crunch. You can also add a few extra fresh blueberries on top for extra flavor and visual appeal.
Optional Garnishes: Add a dollop of yogurt or a sprinkle of granola if you’d like to make it even heartier.
