Vegan cocoa pudding

Ingredients:
- 2 cups (480 ml) almond milk (or any other plant-based milk of your choice)
- 1/4 cup (25g) cocoa powder
- 1/4 cup (50g) maple syrup or your preferred sweetener
- 2 tablespoons cornstarch (or arrowroot powder)
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions:
Mix Dry Ingredients: In a medium saucepan, whisk together the cocoa powder, cornstarch, and a pinch of salt.
Add Wet Ingredients: Gradually pour in the almond milk and maple syrup, whisking continuously to avoid lumps.
Heat and Thicken: Place the saucepan over medium heat and continue to whisk the mixture constantly. As it heats up, the pudding will start to thicken. This should take about 5-8 minutes.
Simmer: Once it has thickened to your desired consistency, reduce the heat to low and let it simmer for another 1-2 minutes while stirring.
Add Vanilla: Remove the saucepan from the heat and stir in the vanilla extract.
Cool: Transfer the pudding into serving bowls or glasses and let it cool down for a few minutes at room temperature, then refrigerate for at least 1 hour (or until set).
Serve: Once chilled, you can top your cocoa pudding with your favorite toppings such as berries, coconut whipped cream, or chopped nuts.
